“Sambal dan saus ini bahannya terbuat dari ekstrak bawang putih 3-4 kilogram, ampas tapioka (onggok) 27 kilogram, saksrin 50 gram, ekstrak cabai leoserin capsikum 0,5 ons, cuka 200 gram, garam 4 kilogram, perwarna jenis poncau satu sendok, pewarna sunset 1 ons, bibit cairan tomat 0,5 ons dan potasium fospat 50 gram,” ungkap petugas kepolisian.

Ia juga menambahkan bahwa pembuatan saus tomat sama sekali tidak menggunakan bahan tomat dan cabai asli. Melainkan menggunakan cairan kimia ekstrak cabai dan esens rasa tomat. Pembuatan saus dan sambal tersebut yakni memasukkan semua bahan-bahan kedalam sebuah drum lalu diberi air panas sebanyak 30 liter setah itu diaduk hingga merata.

“Setelah jadi, saus atau sambal tersebut kemudian dikemas dalam bungkus plastik yang sudah diberikan label dan cap serta ada tulisan bahan komposisi yang sebenarnya tidak sesuai dengan kenyataannya,” ibuh petugas polisi tersebut.

Ketika sudah dikemas selanjutnya pabrik tersebut memasarkan hasil olahannya kepasar-pasar tradisional yang ada diseluruh Kota Bandung dan di seluruh Jawa Barat. Dalam sehari pabrik yang sudah beroprasi sejak 14 tahun itu bisa menghasilkan keuntungan mencapai Rp 100 juta perharinya dari hasil sambal dan saus palsu yang diproduksinya.

edianya memang ada saus yang memang diproduksi secara HIGIENIS yang tetap memperhatikan standar kesehatan dari bahan dasarnya. Akan tetapi ada pula pembuatan saus sambal yang ‘NON HIGIENIS’ yang biasanya diproduksi secara ilegal yang tentu setandar kesehatan pangannya sangat rendah.

Dari hasil uji laboratorium terungkap bahwa dari 10 jenis saus sambel yang beredar di paaran 8 diantaranya diketahui menggunakan bahan pengawet formalin dan diperkirakan menggunakan cabe busuk, ubi dan pepaya sebagai bahan dasarnya.

Tidak hanya itu saja dalam saus sambal tersebut juga ditemukan adanya kandungan beberapa zat kimia seperti sodium BENZOAT, KAPORIT, pewarna TEKSTIL, pemanis buatan (ASKARIN dan ASPARTAM).

Biasanya cara ini digunakan oleh para produsen nakal untuk menghemat biaya, dan terbukti mereka bisa menghemat biaya produksi hingga 80 %. Parahnya lagi terkadang mereka menggunakan kemasan saus sambal ber merek bekas yang diperoleh di pasaran.
